The prevailing wisdom is that after you remove your steak from the grill or broiler, you let it sit a few minutes, so the juices don't drain out in a rush when you cut into it. It's true, that will happen, but who cares? Who doesn't just poke the piece of steak with their fork and then sop the juice back up with it? The only real harm may come from those juices interacting with your side dishes, which is no problem with baked or au gratin potatoes but not good with salad. Otherwise, enjoy.
